Our oil is obtained from the processing of Peranzana olives grown along the slopes of the hills that caress the Gargano.
Every year our olives are harvested at the end of October and then transported to the mill in Torremaggiore, Foggia, for weighing, washing, pressing and kneading. Here it is ground day and night, provided it is done as soon as possible. It is the most exciting and breathless moment of the year! After a short decantation in the tank, our extra virgin olive oil is bottled, without being filtered so as not to deprive it of its naturalness and richness of aromas, flavors and organoleptic properties. It is so ready to give our tables a unique and exclusive flavor that only our olives can give.
